Job Description
Constance Ephelia, a luxurious resort in the Seychelles, is seeking a talented and visionary Chef De Cuisine to lead our fine dining restaurant. As the Chef De Cuisine, you will be responsible for creating exceptional culinary experiences that delight our discerning guests and uphold our reputation for excellence.
- Develop and implement innovative menus that showcase local and international flavours, aligning with the resort's culinary vision
- Lead and inspire a team of skilled culinary professionals, fostering a culture of creativity and excellence
- Ensure the highest standards of food quality, presentation, and service are consistently maintained
- Manage food costs, inventory, and kitchen operations to optimise efficiency and profitability
- Collaborate with the Food and Beverage team to create unique dining experiences and special events
- Uphold strict food safety and hygiene standards in compliance with local regulations and company policies
- Mentor and train kitchen staff, promoting their professional development and growth
- Engage with guests to gather feedback and enhance their dining experience
- Stay abreast of culinary trends and incorporate them into menu offerings where appropriate
- Participate in menu engineering to maximise profitability and guest satisfaction
- Oversee the preparation and execution of special dietary requests, including allergen-free and lifestyle-specific meals
- Conduct regular tastings and quality checks to ensure consistency across all dishes
- Collaborate with the procurement team to source high-quality, sustainable ingredients
- Implement and maintain effective waste management practices in the kitchen
- Represent the restaurant at culinary events and competitions to enhance its reputation
Qualifications
- Culinary degree or diploma from a reputable culinary school
- Minimum of 5-7 years of experience in fine dining establishments, with proven success in a leadership role
- Extensive knowledge of international cuisines and contemporary fine dining trends
- Strong leadership skills with the ability to motivate and manage a diverse kitchen team
- Exceptional creativity and attention to detail in menu planning and food presentation
- Proficiency in food cost management and kitchen operations
- Excellent organisational and time management skills
- Strong communication skills in English; knowledge of French or other languages is advantageous
- Ability to work in a fast-paced environment and handle high-pressure situations
- Passion for culinary excellence and commitment to delivering exceptional guest experiences
- Flexibility to work evenings, weekends, and holidays as required in a resort setting
