Job Description
Constance Ephelia, a luxurious resort in the Seychelles, is seeking a talented and experienced Staff Outlet Sous Chef to join our culinary team. In this role, you will assist the Chef De Cuisine in overseeing the daily operations of our staff canteen, ensuring high-quality meals are prepared efficiently for our valued team members.
- Assist the Chef De Cuisine in menu planning and development for the team members' meals
- Supervise and coordinate kitchen staff to ensure smooth operations and timely meal service
- Maintain high standards of food quality, hygiene, and safety in accordance with relevant regulations
- Manage inventory, place orders, and control food costs
- Prepare and cook meals for staff, accommodating various dietary requirements and preferences
- Train and mentor junior kitchen staff, fostering a collaborative and efficient work environment
- Ensure proper maintenance and cleanliness of kitchen equipment and facilities
- Collaborate with other departments to meet the overall objectives of the resort
- Assist in implementing new recipes and culinary techniques to enhance meal variety and quality
- Participate in menu costing and budgeting processes
- Implement and maintain sustainable kitchen practices, including waste reduction and energy efficiency
- Incorporate cultural sensitivity in menu planning, respecting the diverse backgrounds of staff members
- Monitor staff satisfaction with meals and gather feedback for continuous improvement
- Develop cost-effective meal plans that maintain quality while adhering to budgetary constraints
- Participate in planning and executing special meals for staff events or celebrations
Qualifications
Candidate Requirements:
- Culinary degree or diploma from a recognised institution
- Minimum of 5 years' experience in a similar role, preferably in a high-volume food service operation
- Experience in a Staff Canteen dining restaurant as a Sous Chef/Senior Chef De Partie within a 5-star Hotel environment
- Advanced knowledge of culinary techniques, international cuisines, and food safety standards
- Strong team leadership and management skills
- Excellent communication skills in English, both verbal and written
- Proficiency in menu planning, inventory management, and cost control
- Ability to work efficiently in a fast-paced, multi-cultural environment
- Flexibility to work varying shifts, including weekends and holidays
- Demonstrated ability to manage and motivate a diverse kitchen team
- Proficient in using kitchen management software and Microsoft Office suite
- Strong knowledge of nutritional principles and ability to cater to various dietary requirements
- Experience in implementing sustainable kitchen practices and reducing food waste
- Ability to analyse food costs and implement cost-saving measures without compromising quality
- Current food safety certification (e.g., HACCP)
