About the Role
This role is based within a classy, upscale, fine-dining restaurant renowned for its refined atmosphere, exceptional service, and elevated culinary standards. As a Chef de Partie, you will oversee a specific section of the kitchen and play a key role in delivering sophisticated, beautifully presented dishes that reflect the restaurant’s prestigious reputation. You will work closely with an experienced brigade to ensure a seamless service and uphold the highest levels of quality and craftsmanship expected in a luxury dining setting.
Main Tasks & Responsibilities
Daily Operations
- Prepare, cook, and present dishes within your assigned section to fine-dining standards.
- Ensure all dishes are consistently executed to the required taste, texture, and presentation.
- Complete and maintain mise en place for your section before, during, and after service.
- Ensure your station is set up correctly and fully stocked before each service.
Service
- Run your section efficiently during service, maintaining speed, quality, and organisation.
- Coordinate with the pass and other sections to ensure timely sending of orders.
- Adapt quickly to changes in orders and special requests while maintaining standards.
Quality, Hygiene & Safety
- Follow all food safety, hygiene, and HACCP procedures at all times.
- Ensure proper storage, labelling, and rotation (FIFO) of all ingredients in your section.
- Keep your work area clean, tidy, and compliant with health and safety regulations.
Stock & Waste Management
- Monitor stock levels and alert senior chefs to any shortages or ordering needs.
- Help minimise waste through correct preparation, handling, and storage of products.
- Assist with stock counts and deliveries when required.
Teamwork & Training
- Work closely with the Sous Chef and Head Chef to execute menus and specials.
- Support and guide Commis Chefs and junior team members on your section.
- Communicate clearly and respectfully with all members of the kitchen brigade.
