Job Description
The Pastry Sous Chef, under the guidance and supervision of the Executive Sous Chef, is responsible for supervising, overseeing, and directing all aspects of the pastry kitchen operation. The role ensures that all production, preparation, and presentation of pastry items meet Constance Hotels’ high standards of quality, consistency, and excellence, while complying with established policies and procedures.
Duties and Responsibilities:
The responsibilities and duties of this position include, but are not limited to, the following. Additional tasks may be assigned at management’s discretion.
- Ensure proper supervision and leadership within the pastry kitchen in line with assigned responsibilities.
- Supervise the work of pastry team members, facilities, and costs to ensure maximum efficiency and profitability of the Pastry department.
- Establish and manage staff rosters to meet operational requirements.
- Control and monitor on a continuous basis:
- Quality of production and presentation.
- Guest satisfaction levels.
- Cleanliness, sanitation, and hygiene standards.
- Ensure optimum performance in all assigned areas.
- Organise and supervise the production, preparation, and presentation of pastry items to ensure the highest quality at all times.
- Conduct training sessions for pastry team members to enhance skills and knowledge.
- Perform inspections of pastry kitchen areas, cold rooms, and equipment to ensure proper maintenance and hygiene.
- Provide hands-on supervision and assistance in all pastry kitchen operations as directed by the Executive Sous Chef.
- Check mise en place (MEP) thoroughly before and during service.
- Perform other related duties and special projects as assigned.
Qualifications
Qualification:
- Middle or Secondary Education with additional training or certificates in the relevant field. Food handler certificate is mandatory.
Experience:
- Minimum 3 years of experience in the hotel industry, preferably in luxury resorts or remote island locations.
- At least 1 year of professional experience in a similar position.
Technical skills:
- Self-motivated with strong organisational skills and attention to detail.
- Ability to work in a high-pressure, fast-paced environment with excellent communication skills.
- Knowledge of basic food safety and enthusiasm for continuous learning.
