Lo Chef del Ristorante La Ripa è Andrea Miacola, Ex Alunno Alma della XIII edizione, dove propone una cucina Pugliese strettamente pensata di lavorare con le cooperative locali e dove quasi tutti i prodotti vengono dalla zona del Gargano, utilizzando anche prodotti fermentati e salumi di mare, una cosa su cui ci impegnano molto è nell attenzione nel evitare il più possibile gli sprechi alimentari.

le caratteristiche del Ristorante aperti solo per il servizio serale, La Ripa è in bassa stagione 20 coperti, mentre 40 coperti circa in Alta Stagione, siamo molto attenti alla qualità di servizio, il ristorante è aperto solo a cena mentre a pranzo invece bisognerà preparare solo per il servizio del Dinner, quindi l'organizzazione della propria postazione in termini di tempistica e organizzativi saranno importanti per il candidato .

La Proprietà offre alloggio in una casa solo per 2 persone con 45 mq2 di casa appena restaurata e ammobiliata nuova.

A Fine Stagione lo Chef da anche un sostegno al candidato di fare un esperienza lavorativa in un 3 Stelle Michelin, oppure in un 2 Stelle Michelin all'estero dove ha lui lavorato precedentemente, oppure ristoranti presenti su associati JRE o Ambasciatori del Gusto o Michelin.

The Chef of Ristorante La Ripa is Andrea Miacola, a former student of ALMA (13th edition). He offers a cuisine deeply rooted in Puglia, working closely with local cooperatives. Almost all products come from the Gargano area. We also use fermented products and “sea charcuterie.” One of our key commitments is minimizing food waste as much as possible.

We define our cuisine as fish-based.

Dynamic: The menu changes frequently depending on the local catch. We often use smaller fish to support local fishermen.

Flavor: Bold and distinctive, because we aim to convey all our passion and research from the very first bite.

Territory: Each dish is designed to represent the culture and products of our region.

Restaurant details:

We are open only for dinner service. During the low season, we have 20 seats; during high season, approximately 40 seats. We place great emphasis on service quality. As we are open only in the evening, lunch hours are dedicated exclusively to preparation for dinner service. Therefore, strong organizational and time-management skills at one’s station are essential for the candidate.

Some members of our team are international, making this an interesting opportunity for those who wish to improve their English. We are looking for someone who works with passion and determination, just like we do.

The ownership provides accommodation, if desired, in a newly renovated and newly furnished 45 sqm house shared by only two people.

At the end of the season, the Chef also supports the candidate in gaining work experience at a 3 Michelin Star restaurant, a 2 Michelin Star restaurant abroad where he previously worked, or at restaurants associated with JRE, Ambasciatori del Gusto, or Michelin.

Accommodation includes utilities (water and electricity).
